Charcoal! We visited a traditional charcoal factory and museum and learned so much. I was very interested because I cook so much with fire, and want to know about how have the best quality with no chemicals. Basically you can make charcoal out of any wood (denser is better) and it is done by slowly cooking it in an oven without a lot of oxygen, which draws out everything from the wood (oils, water, gasses etc) and leaves solid carbon behind. In the first picture I had coffee and stirred my milk with charcoal which added a delicious smoky flavor, then charcoal cake, noodles, cookies, and everything else you can think of. The Japanese also cook rice with a hunk of charcoal in it as well! I will definitely be doing that back in NYC. 😎😍🤫
