Vegan meal!! Cauliflower steak, black beans, beets and brown rice. Brushed the cauliflower steaks with a mix of turmeric, salt, coriander powder, garlic powder, onion powder, Hungarian hot and spicy paprika with a little avocado oil.
On the night before my weekly shop, it was either defrost something I’d made previously or, that perennial standby, cauliflower cheese. This used the toasted crusts of last week’s loaf, some expensive but stinky vintage cheddar and some of a massive cauliflower bought last Thursday. I didn’t enjoy the cheese in a sandwich but it was great in the white sauce. Well, I couldn’t waste it! Pineapple Steak Teriyaki w/ Garlic Cauliflower Rice
Steak (I had 2 good smallish tenderloins) cut into bite sizes pieces
Cornstarch (a little less than 1/4 cup)
1 pineapple, cut in half and chunks cut out, cored, extra juice reserved, about 1 cup cut into bite sized chunks
1/4 yellow onion, chopped chunky
1/2 green pepper, chopped chunky
4 cloves garlic, minced & divided in half
1/2 cup soy sauce (coconut aminos for gluten free/paleo)
1/2 cup mirin (or 1/3 cup Sherry, 2 tsp. white sugar & 1 Tbl. rice wine vinegar)
4 Tbl. brown sugar
4-5 dashes fish sauce
4 Tbl. fresh pineapple juice
1 tsp. ground ginger or 1" knob ginger freshly grated
1-2 tsp. cornstarch in 1-2 Tbl. cold water (depends on how thick it needs to be) slurry
1/4-1/2 caulflower, riced (grated)
Green onions & sesame seeds for serving
Toss steak in cornstarch & set aside in fridge.
Whisk all sauce ingredients together in medium bowl minus cornstarch & water.
Heat large frying pan with olive oil & brown meat on all sides. 3-6 mins Don't crowd the pan- do it in batches if necessary. Remove. Add olive oil if necessary & a little sesame oil & cook onion & pepper on fairly high heat, 4-6 mins. Set aside. Add garlic on hot oil and cook 1-2 mins, careful not to burn it. Add sauce and cook down a bit, before adding cornstarch slurry. Turn down heat and stir briskly as you add the slurry. When it's the consistency you want, add back in vegetables & steak. Simmer a few mins and then add fresh pineapple.
Meanwhile, heat oil in separate pan. Add garlic, cook 1-2 mins. Add cauliflower, adding extra olive oil & salt & pepper and cook until tender, 4-7 mins or so. Add about 1/2 cup green onions.
Serve half in the hollowed out pineapple, and fill the rest with the teriyaki. Sprinkle with extra green onions and sesame seeds.

Cauliflower and romanescu au gratin in the oven. I love it, first I make a watery sauce with a little milk, a little butter, cream, water, a teaspoon of onion powder, a teaspoon of salt, a little garlic powder, a little spice for chicken and herbs , I heat all this in a pan stirring. Apart I put on a tray the cauliflower and the romanescu cut into medium pieces, I pour over the white sauce and then I put 200 grams approximately of striped gouda cheese. Then I cook it in the oven for 50 minutes at 180 °.

Me encanta, primero hago una salsa aguada con un poco de leche, un poco de mantequilla, nata, agua, una cucharadita de cebolla en polvo, una cucharadita de sal, un poco de ajo en polvo, otro poco de especias para pollo y yerbas, todo esto lo caliento en una sartén revolviendo. Aparte pongo en una bandeja el coliflor y el romanescu cortados en pedazos medianos, le hecho por encima la salsa blanca y luego les pongo 200 gramos aproximadamente de queso gouda rayado. Lo cocino en el horno por 50 minutos a 180°.

I blended @traderjoes organic wild blueberries, their unsweetened coconut milk and rainbow frozen cauliflower, with a splash of lemon extract and vanilla extract, as well as a little bit of stevia, and a tablespoon of coconut oil for some healthy fats to help our bodies absorb all the vitamins and nutrients in the blueberries and cauliflower 🙌 It's a delicious snack/treat any time of the year, packed with healthy goodness and helps get that blue/purple color in for eating the rainbow!👍
