So, yesterday, while considering my this week menu, I found way to many vegetables in our storage, as well as plenty of cheese, so, my lovely spouse will have to accept more than one day without meat this week ;) well, anyway, back to the point, between the other things, I found sweet potatoes and here is the recipe what even my husband seems to like:
So for 2 portions of baked sweet potatoes you will need: 2 large sweet potatoes, 1 egg, (maybe also cheese, like Parmesan), salt and pepper to taste.
How to make - Clean and cut sweet potato halfway open and heat in the microwave for 5-7min. Once the potato is softened, (watch out of getting it careful out of the microwave!) scrape the inner part of the sweet potato out of the peel with a spoon, mash it with a fork, mix together with 1 egg, salt, pepper, eventually cheese as well, and fry it in the non stick pan without oil until egg is cooked. Then, refill the peel with the mixture. Ready! Well, now, don’t forget to add some side salad to make the veggie mission complete! Enjoy! .
