Baker collected many of those recipes in this two-volume set The Gentleman's Companion: Being an Exotic Cookery and Drinking Book. 1946 second edition by Crown Publishers. Typical sun fading to red cloth spines of both editions, interior clean besides early owners signature in pencil on both ffep and recipe written in pencil on rear inside board. Rum predominantly achieves it’s golden / amber hues when it ages. More often than not, rum achieves its colour when the alcohol in the rum interacts with the wood of the barrel it’s aging in. The size of the barrel also makes a huge difference - the smaller the barrel, the higher wood to spirit ratio.
To a lot of peoples frustration, it is not uncommon for distillers to enhance rums appearance by adding artificial caramel-colored additives or burnt molasses - this can usually be found in cheaper rums.
Below are three rums that have all been aged for five years in oak barrels, but have achieved differing complexion. I love looking at the difference between them all and enjoy their individuality. — Darkest to lightest —
PLANTATION BARBADOS 5 YEARS -Aged for three years in American oak barrel then two in Ferrand French oak casks.
ENGLISH HARBOUR 5 YEAR RUM - Aged for five years oak barrels.
ANGOSTURA 5 YEAR OLD - Aged for five years in charred American oak bourbon barrels.
What are your thoughts on distillers adding an extra hand when it comes to achieving that devilish rum look?. *Just to clarify, I am not implying that any of the rums above have added colouring to achieve their look, I am just using them as a visual to show how they all differ even though aged for the same amount of time.
