☀️ It’s going to be a hottt week in Melbourne this week, summer isn’t over just yet 🙌🏽 So I’ve made this raspberry slice as a snack that’s not only delicious and healthy, but will cool me down as well 🥰

Ingredients:
1 1/2 cups of raw almonds 
1 cup coconut flakes 
3 tbs coconut oil (or until is enough for base mixture to stick together) 
5 medjool dates (depitted) 
2 cups raspberries 
150g raw cashews .

Method:
Soak cashews in boiling water for half an hour 
Place almonds, dates,coconut and coconut oil in a food processor and blend until ground
Press mixture into a lined baking tray and refrigerate while you make the raspberry mixture 
Blend raspberries in food processor and set aside
Blend cashews in food processor 
Add raspberry mixture and blend until combined 
Place mixture ontop of base mixture in baking tray and put in freezer overnight
We're out here in your coffee shops, taking underexposed shots to deliver the big moods.
I've definitely qualified for my degree in cleaning this week! Need de-cobwebbing? I'm your girl - 3 metre ceilings are no problem for this brush-weilding expert. Copper pans need cleaning and ovens de-greasing? I've got the elbow grease it takes to make them sparkle. Knives need sharpening? My whet stone and steel are at the ready! My goodness, have we cleaned the cooking school this week - we've scrubbed, polished, dusted and waxed everything to within an inch of its life! And I must say, as I glanced over my shoulder before we shut the doors on Friday, I couldn't help but smile as it positively sparkled in readiness for our first classes of the year next weekend. There are stll lots of twiddley bits to do ('twiddley' being vernacular in our house for all the little things.) Vases and buckets are lined up waiting to be filled with armfuls of flowers and foliage raided not only from our own garden, but those of kind friends too.Tubs and baskets are ready for their cargo of fruit, veggies and beautiful rainbow eggs (we buy these from lovely young farmers just up the road, and are happy to get some for you if you would like them...they are the best eggs ever!) @goodgoogeggs. A load of aprons and napkins are waiting to be ironed, and I'm in the throes of making a big batch of chilli jam to go into our goodie bags (that's it sitting on the windowsill in the photo.) So yes, still lots to do...but it's exciting!  After a good, long summer break I'm really looking forward to teaching again and trying out some of the new recipes I've been working on.These photos are just a little peek at what we get up to - I hope you enjoy them. Запеченная буженина с клюквенной глазурью

Обещанный «мужской» ужин. Мяяясо!😉 И кое-то  для девочек, пюре из сельдерея.😋
Многие запекают буженину на праздники, шпигуют чесноком, и подают как в горячем, так и в холодном виде. А в Европе и Америке любят запекать копченую ветчину, с разными глазурями, соусами и интересными овощными гарнирами. Когда я увидела запеченную по-домашнему буженину от «Алан» , то сразу подумала о том, что она просто идеально подойдет для запекания. Она варено-копченая, удобной формы в виде небольшого шарика. Вкусная в холодном виде, а в горячем просто объедение! Буженина эта универсальный продукт. Подойдет  как для салатов, так бутербродов и супов.
Я решила сделать для нее ароматную клюквенную глазурь, традиционное украшение из бутончиков гвоздики, и пюре из сельдерея в качестве гарнира. Получилось роскошное, очень праздничное блюдо, которым мы с мужем отметили 25 лет знакомства.

My kitchen is being gutted and remodelled on Monday. Very exciting but also means that I won’t have a kitchen for just under a month 😑 I’m using the weekend to cook some of my faves as a sort of goodbye and thank you to my old kitchen. So today I prepared pizzoccheri! Buckwheat pasta, cooked with potatoes and Savoy cabbage, seasoned with butter and farm cheese.

Love you a brunch! When it comes to food that will warm your soul @thecountryclubneworleans Truffle Mac n Cheese (Gouda, Mascarpone, and White Truffle) takes it to a luxurious level. Such a rich and creamy sauce, a earthy flavor from the white truffle, and a crispy topping. But wait it gets better! I added Bacon and Fried Oysters 😍😍😍. Y'all know I was in heaven with all of this bacon. From now on this is the only way I want my Mac N Cheese.

some of my favourite ways of eating these vegan chocolate shortbread cookies are⁣⠀

– dunked in a hot cup of tea⁣⠀
⁣⠀
– dipped in melted chocolate ⁣⠀
⁣⠀
– drizzled over with golden syrup⁣⠀
⁣⠀
– outside at a picnic with a bowl of fresh fruit⁣⠀
⁣⠀
⁣⠀
FULL RECIPE⁣⠀
⁣⠀
1 cup dairy-free butter (I used Vitalite)⁣⠀
1/3 cup caster sugar⁣⠀
100g dark chocolate⁣⠀
2/3 cup cornstarch⁣⠀
1 and 1/3 cup plain white flour (do not use strong flour!)⁣⠀
INSTRUCTIONS⁣⠀
⁣⠀
Cream dairy-free butter, sugar and vanilla essence.⁣⠀
Sieve in flour and cornstarch.⁣⠀
Mix with a mixer until crumbly consistency.⁣⠀
Crucial to this recipe – do not overwork/over-mix⁣⠀
Chop up chocolate of choice and add to mixture.⁣⠀
Cover dough in cling film, set aside in fridge for at least 30 minutes. This will relax the gluten, thus preventing it from becoming chewy and tough.⁣⠀
Pre-heat your oven to 160°C (fan oven. Set to 180°C for normal oven)⁣⠀
Roll it out until 1 cm thick and cut out your shapes.⁣⠀
Place biscuits on parchment paper, sprinkle with caster sugar and bake at 160°C for 40 minutes.⁣⠀
Hollar if you love Hollandaise! And if you’ve never had it vegan, you’re missing out! 😋🌱

Tofu Florentine: Sprouted English Muffin, Baked Tofu (w/ Garlic Powder, Black Salt rub), Sautéed Baby Spinach, Homemade Cashew Hollandaise (Raw Cashews, Water, Black Salt, Turmeric, Cayenne Powder, Lemon Juice)
Saturday lunch involved me diving fork first into this plate of spaghetti with olives and roasted tomatoes.  I used chickpea noodles, but you can use any shape or kind of pasta you want. Recipe link in profile.
Bacon Brussel Sprouts 🥓 The bacon fat is 🔑 .
.
•Ingredients•
1/2 lb Brussel sprouts 
5 strips of bacon 
2 tbsp garlic powder 
Salt and pepper 
3 Tbsp avocado oil
.

•To Make• 
1. Preheat oven to 400 degrees.
2. Wash and trim the Brussels sprouts then toss them in the avocado oil, garlic powder, salt and pepper. Set aside. 
3. Dice the bacon slices into small pieces. Cook on medium heat. Bacon should be at the point right before it’s crispy. Remove from heat and place on paper towel to remove excess grease. 
4. Pour half the bacon grease in to the bowl of Brussels and toss. 
5. Line baking pan with foil or parchment paper. 
6. Spread Brussels evenly over the pan. Sprinkle the diced bacon over the Brussels sprouts. 
7. Cook for 25 mim. Remove from oven and enjoy
