Yes boys and girls. Your boy was feeling Pizza the other day so decided to hit up @wearerudyspizza for the first time. I’d heard a lot of good stuff about it, especially that them mans are smashing out authentic Neapolitan pizzas. Mans a pizza connoisseur out here lowkey, but tbh there’s no decent pizza joints. 🤷🏽♂️ Neapolitan pizza has a thin base, a wet and soggy centre, and the crust on the sides puff up and char due to the temperature in the oven. The char makes the crust bitter but this should be balanced out by the sweetness of the sauce. In order to be Neopolitan, most ingredients need to be from the Naples region too.
Rudy’s is a cool joint, the ambience is raw and minimalistic. It was hella dark in there and they were on some next romantic ting with candles and shit, it was a bit of a sticky one still for all 3 of us boys. 😂😂 We got a table in about 10 mins and placed our order. We waited 40 minutes for our pizzas which was too long 😤 you stick the pizza in the oven for 60 seconds, how the fuck does it take it that long? 😒 A table next to us got their food earlier than we did, and they were seated after we had ordered. Why does this shit always happen to me?!🤦🏽♂️ Anywho, I got a Margarita Pizza which is the OG Neopolitan. It was dope, they put some serious effort into it. Star of the show was deffo the dough though, it was so airy and I loved the char. I think they proof the dough for 20 hours which does the trick.
I wasn’t a huge fan of the tomato sauce, as it tasted too bitter. Neopolitan Pizzas that I’ve tasted before had a sweeter and richer sauce which balanced the bitterness from the crust, but I didn’t get that here.
Overall I would say it was a solid pizza, but I’d say Neapolitan style pizza is proabably not my favourite style of pizza.

vegan shortbread cookies!!
you will need:
- 1/4 C + 1 tbsp sugar
- 2/3 C coconut oil
- 1 tbsp plant-based milk
- 1 tsp vanilla extract
- 3/4 C all purpose flour
- 3/4 tsp baking powder
- tiny pinch of salt
1) preheat oven to 350°F
2) mix dry ingredients
3) in a different bowl, cream sugar (excluding the 1 tbsp) and coconut oil together
4) add vanilla and milk to the coconut oil/sugar mixture
5) mix the dry ingredients with the wet
6) shape into small balls and place on a baking sheet

Central Gyros in Chicago's Cragin neighborhood. Seriously the best yee-ros (gyros) sandwich in the entire city. Their tzatziki sauce puts everyone else to shame. Tasty flan to finish off the meal.
