snacks snacks snacks!!! one of my go to snacks are popcorn 🍿. it doesn’t always have to be salty and drenched in butter. this is how I make mine! only takes 1 1/2 mins in the microwave!! I use 1/4 cup of kernels, 1/2 tbs of olive oil, a pinch of nutritional yeast (topping) and I put a little bit of hot sauce and shake it up!! so good and you don’t have to feel guilty about. you can use brown paper bags too, I just always grab these at dollar tree. #healthysnacks#easysnacks#weightlossjourney#happyfood#snacks

Something about food choices 🥑 It’s a no brainer that we should eat healthy 🤓 But do you also eat to be happy? I don’t mean eating as a means to avoid uncomfortable feelings or boredom. Quite the opposite. In fact, I’d say it’s closer to mindful eating.
Here’s what I mean. On the one hand, eating unhealthy foods messes up your system and therefore you can’t find inner balance. On the other hand, trying to follow a diet that makes you miserable (even if it’s supposed to make you very healthy) will have the same effect. Besides, sticking to a rigid idea of what your diet should be, can very well backfire in the long run.
It’s important to find where that balance lies for you. I was inspired to post about this after a conversation I had with my dear friend @mshealthesteem about deceitful health trends that promise more than they could ever live up to. And it got me thinking about how people often go through personal battles with food, just because the media says that your life will be perfect if you eat/drink their holy grail.
The real change happens when you learn to listen to your body. When you really listen, mindfully, you may find that you eat certain foods because they give you comfort, but they make you feel awful afterwards. You may find that you avoid certain foods, because you want to label yourself as x or z. You may find that it’s very hard to avoid certain foods, because they bring up memories of a happy time. Or you may find that you force yourself to have certain foods because you believe they’ll help you, but you actually struggle to swallow. So, why do you eat or avoid eating your food? Does it make you feel truly healthy and truly happy, or is there another story behind it?
Right now I am in a place where I want to allow myself to eat healthy without compromising joy. There are days when I have a green smoothie or juice for breakfast, and there are also days when I have fries for a snack (for real!) And then there are days when you are right in the middle, in perfect balance, when healthy and delicious come together. Mmm... choco banana bread, what a treat! 🥰

Sólo necesitas: ✔️ 1 manzana 🍎 pequeña ✔️ 1/2 taza de yogurt griego natural
✔️ canela en polvo
✔️ 1 cucharada de chia
✔️ 1 cucharada de quinoa inflada 👩🏻🍳 La única preparación es para las manzanas. Ponlas en un sartén anti adherente con un poquito de mantequilla (yo uso ghee), agrega canela en polvo y déjalas un par de minutos para que se asen y queden doraditas. Agrega lo demás toppings en un tazón y listo!!! 😍 📝 prepara 2 o 3 porciones de manzanas para la semana y que sea más fácil prepararlo; porque créeme lo vas a querer repetir!!! ❤️

Tofu and Vegetable Thai Green Curry (Serves 4)
This green curry is so delicious and a once in a while treat. Hope that you enjoy it.
3 small potatoes, peeled and quartered
1/4 butternut pumpkin, peeled and cut into triangle bite size pieces
1 carrot, peeled and sliced into bite size pieces
1 tablespoon of coconut oil
2 tablespoons of Thai green curry paste (ensure it has no fish products, such as shrimp)
1 brown onion, sliced
4 cloves garlic, chopped
6 basil leaves, chopped
1/2 head of broccoli, cut into florets, husky parts removed, and quartered
10 green beans, stringy parts removed and halved
3 large cup mushrooms, halved
1/2 small green capsicum, sliced
1 red chilli, deseeded and sliced
225 grams organic firm tofu
270 grams of premium coconut milk
A little water
A tablespoon of lemon or lime juice
A few coriander sprigs, chopped for garnishing
Steam potatoes, pumpkin, and carrot for 10 minutes. While steaming, heat oil on medium fire in saucepan and add Thai paste, cooking for 30 seconds. Add onions, garlic, and basil and cook until onion is translucent. Add all vegetables and tofu. Cook until broccoli turns a dark green. Add coconut milk and stir. Add a little water and stir. Cover with lid for 5 minutes. Add steamed vegetables and cook uncovered for 5 minutes. Squeeze lemon juice or lime and stir. Garnish with coriander. Serve with cooked basmati rice and chopped kale.
