I'm feeling🎨 and💪. I've been feeling more creative with my food. I used to always feel like eating healthy meant chicken and rice or chicken and salad every day. Since I got certified as a Ultimate Portion Fix Master Coach, I've really been trying to test new recipes out because I know if I don't want to eat the same thing every day for the rest if my life, no one else does either😄.
What's more fun for a toddler than smooshing a mix into a tray? These lovely mixed nut and grain fruit breakfast bars came out with just the right proportion of chewy and crumbly. Squirrel approved as he licked the spoon and put the whole bowl on his head then barely waited for them to cool before stuffing a couple in his mouth.
This mix to bind it all together was melted butter, dried apricots and raisins blended into a paste and a blended banana. It's a little wetter than a traditional flapjack going in so I was afraid it wouldn't set but it baked right up.

When you've got to pull overtime at work- what do you do? Keep calm, pour a glass of FRUIT JUICE ( in this case I opted for cold pressed apple, beetroot, carrot & a small slice of ginger ) , snacked on my favourite Coconut Granola and Ahhh.. I instantly feel Better!! ☺ Snack healthily whenever you can because every bite counts! 💡Tip of the day - Stock up healthy snacks in your cubicle or work drawer to avoid the evil junk food temptation!
