Katie likes to prepare “salad kits” at the beginning of each week to have as lunch options for those grab and go hectic mornings. She’s sharing her process for this week’s #whatsinmycoacheslunchbox.
👉🏽 Bottom Layer: Include all desired salad toppings such as; peppers, cucumbers, tomatoes, olives, avocado tossed in lime juice, berries, cheese, hard boiled eggs, beans, chicken, tuna, salmon, steak, low sodium deli meat, etc.
👉🏽 Middle Layer: Greens such as; romaine, iceberg lettuce, spinach, kale, etc.
👉🏽 Top Layer: Use snack size baggies to portion out dressing or vinaigrette; as well as, any crunchy toppings (example: few tortilla strips, wonton strips, crispy peppers, croutons, nuts, etc).
🤜🏽 Katie likes to use mix up these three layers to keep a wide variety of flavor profiles to avoid getting burnt out.
*Tip: Layering the ingredients is key to prevent the greens from getting soggy after being in the fridge prepared ahead of time.
