Made with beautifully bouncy sweet potato noodles and loaded with plenty of veg for fibre (I used mushrooms, spinach, carrot and onion). Also added some beef bulgogi in there too for a hit of iron. A dish like this has minimal meat added so it’s a great way to cut down on your meat intake but still have a filling and satisfying meal. Or you can substitute the beef for tofu for a vego version 🌿
