Since becoming vegan, I’ve DYING to find a bottomless brunch at a non-vegan place that also has an amazing vegan option. @playabettys on the upper west side checks all those boxes! The first photo is the Vegan-ish Tacos which is their vegan take on a fish taco. It’s a breaded and fried hearts of palm “fish”, vegan cheese, cabbage slaw and valentina hot sauce aioli in a navajo fry bread shell. The tacos are so fresh and light. I can not recommend this dish enough. Jackie also loved the tacos and said she would definitely order them.
The second photo is their cauliflower buffalo wings that were also very good. The tacos were definitely the stand out dish though.
Six mile run on the Vegas Strip this morning. I’m out jogging as others are stumbling home from the clubs. Some days I miss partying my ass off. Some days I’m grateful for my healthy body and clear mind. This weekend in Vegas I’ve felt both emotions. But I always feel better when I blast some music and just run. #running#run

Let’s see! 🙃 Salad contains red cabbage, kale, carrots, peanuts, red bell peppers and green onion. We will mix the mandarin oranges later in. The dressing is made out of tahini, soy sauce, date syrup, fresh ginger, orange juice, white wine vinegar and chili sauce. 😋 I am a little skeptical about the kale. Crust: spelt flour, baking powder, water, pinch of salt and sugar
Toppings: tomato puree as a base, baby spinach, vegan cheese, red onion, garlic and peppers roasted on olive oil (added himalayan salt and some other seasonings), black olives and corn.🍅
Baked it for 10 minutes at 220 degrees celsius.

▪️Chew each mouthful of food 20-30 times. If you suffer from digestive complaints, this really helps with bloating! .
▪️Complete a mindfulness tool each day - even for a few minutes - I love @happynotperfect. This can bring clarity from your day and evaluate why you may be feeling the way you are. .
▪️Try a variety of new foods! Our gut bugs consist of 300-500 different species - they need a variety of fibre and prebiotic sources! Fermented foods are ace and a great, daily prebiotic source is available from @bimuno.
▪️Exercise! Endorphins trigger positive feelings in the body. .
▪️Be disciplined - is there something that makes you feel bad? Social media? Set yourself a timer and come off. .
▪️Sleep environment - limit your time on devices in your bedroom. Make sure it’s the right temperature for you. Declutter! .
▪️Enjoy every day! Cliche? Maybe, but it’s true - don’t delay your happiness. .
▪️Set a goal today. Look at the week ahead and analyse where you can make an improvement - no matter how small that may be - you’ll feel like you have a road to follow! .
It’s not much but after exactly one week of starting a #plantbased diet, so much has changed. I’m not in pain anymore. My migraines are gone at least for now. My tummy issues have improved. My eyes seem healthier. My complexion is so much better. Even my bags are lightening up. My double chin is going away. I switched to a #vegan diet because of health issues. I will never push it on anyone but I can say it has improved my quality of life in just ONE week. It’s crazy. #vegetarian#vegans#veganlifestyle#weightloss#vegetarianlife#cleaneating

Oh my god these @belvita soft bakes with chocolate hazelnut in are the best thing I’ve ever eaten 😦 they taste like a soft cookie with Nutella in them! Also today has been busy! GYM cleaned the entire house. It is so easy to let go of yourself when things start to get busy. I was just talking to a close friend about how I thought I’d be so healthy once I started ND school but, in reality, I’ve let myself slip from healthy behaviors that I used to follow...and you know what? That’s okay. I’m trying not to be hard on myself. Which is why I’m making #selfcaresunday a thing for myself and you can join me too! Take just 20 mins of your day to do a face mask, organize your space, get a massage, or just some deep breathing. Remember that change and improvement take baby steps!

🌻What happens when you eat mangos only for a month 🤔🤔 WELL, I'll answer that in 3 weeks - BUT, one week of eating only mangos, until full satisfaction, zero restriction on intake, and you can see there is still inflammation, but it is starting to reduce 🙌🏽 Usually if I want to be symptom free bloating wise I need to restrict food entirely! I would have days where I wouldn't eat anything because I was so uncomfortable in my body. Here I'm eating an abundance of FRUIT (one of my worst triggers) and everything is calming down 👏🏽👏🏽 Committing to the process and TRUSTING is key 🔑🗝🔑🗝

Receita Hambúrguer Proteinudo
250 GRS de lentilha já cozida e temperada a gosto
500 GRS de tofu de sua preferência, mas os mais consistentes seria melhor.
200 GRS de milho refogado com cebola e salsa
5 colheres de sobremesa de nutritional yeast a sua escolha ou cevada de cerveja
12 colheres de sopa de ( mistura de quinoa em flocos, amaranto em flocos, farinha de chia, farinha de linhaça)
Páprica defumada a gosto
Coentro, rúcula, salsinha,, cebolinha a gosto
Fumaça em pó a gosto
150 GTS de gergelim (misturei branco e preto) para empanar
Modo de fazer
Bater o turu com a lentilha até virar um creme grosso e separe em uma bacia.
Bater o milho e todos os demais ingredientes, menos a mistura de farinhas.
Junte com a outra parte, vai adicionando a mista de farinhas aos poucos até ficar bem misturado e consistente para modelar os hambúrgueres.
Empanar no gergelim.
Pode grelhar, assar ou comer assim que empanar. Grelhado ficou fantástico! 😋

Aaaaaand, that's how we finish the weekend! Vegan roast done right with all of the trimmings including cauliflower cheese. I just have all of my favourite bits and no 'meat', but husband had the Linda beef roast
I feel like i discovered the biggest life back when I started getting into the habit of #mealprepping. 🙌 Saves so much time not having to cook every single day, reduces #foodwaste, keeps me from reaching for processed foods when I'm hungry since #homemade snacks are already available, but most importantly - way less chaos getting dinner on the table when you have hungry kids wanting your attention. 💯
After working the whole day my mind is pretty empty and I can’t wait to get to bed and have a good night’s sleep. So no more writing (or anything else that requires thinking) for me today!
I baked these cute little bundt cakes last weekend. The size is perfect, isn’t it? One little cake makes two portions. Actually wouldn’t mind having one just for myself right now!

Vegan Berry Smoothie recipe below 👇🏻 Save for later 📌
How hard is it to get your toddlers to eat spinach? (Please don’t comment- “Mine loves spinach” I will unfollow you) 😉 I try putting it in sandwiches and stir frys but Oliver always spits it out. One way to get him some greens is in a smoothie! Win win because he loves them! You may have seen my story the other day with his smoothie mustache 😂 (I’ll post it again if you didn’t!)
VEGAN BERRY PROTEIN SMOOTHIE
2 cups spinach, lightly packed
2 cups mixed berry fruit blend, frozen
2 TBSP hemp seeds
1 banana, frozen is better
1 TBSP maple syrup
1 TBSP peanut butter
1½ cups almond milk
1 scoop vegan protein powder, I use Juice Plus Complete French Vanilla.
1) Add all the ingredients into a Vitamix or high speed blender and blend until smooth.
*Add less or more almond milk to get the desired thickness you want.
