Lately I have been one stressed out and tired single Mama. I have been filled with fear and as I dislike change in general have been struggling with direction. A few days of rest and relaxation with a really great friend and my girlies; baking, eating yummy sugar free choccies and getting out in nature, eating lots of great food and getting loads of Vitamin D have left me feeling refreshed and invigorated. It’s amazing how quickly things can suddenly look brighter, despite the situation.
Big changes are coming and I’m looking forward to them! I’m releasing the fear that I’ve held onto for so long and I’m going to spread my wings 🦅 .
Oh, and if you want to make ⬆️ Mix 350g strong white bread flour, 150g stoneground strong wholemeal flour, 10g salt, 10g yeast, 400ml warm water and 40ml olive oil until smooth. Then leave to rise for about an hour in a square tub, tip out, cut up gently and bake on a floured tray at 200 for about 22 minutes 😍😍

VEGAN MATCHA-FROSTED BLUEBERRY COCONUT CUPCAKES 🧁
½ cup almond milk
1 tsp apple cider vinegar
¼ cup spelt flour
¼ cup whole wheat pastry flour
1 tbsp cornstarch
2 heaped tbsp shredded coconut
1 tsp baking powder
¼ tsp baking soda
¼ cup coconut sugar
3 tbsp applesauce
½ tsp vanilla extract
⅓ cup blueberries, fresh or thawed frozen
For the matcha frosting:
⅓ cup coconut cream*
1 tbsp matcha
1-2 tbsp agave
more blueberries and coconut to decorate
Preheat oven to 350F. Line a cupcake tray with 5 paper liners. Set aside.
Stir the apple cider vinegar into the almond milk and set aside.
In a medium bowl combine all the dry ingredients. Mix to combine.
Make a little well in the dry mixture and add the applesauce, vanilla, and the almond milk ACV mixture. Stir until well combined. If it seems too thick, add in a little more almond milk until it reaches a smooth batter consistency. Gently fold in the the blueberries.
Spoon the mixture evenly into the cupcake liners - they should be about ¾ full.
Bake for 18-22 minutes or until a toothpick comes out clean.
Remove from oven and let cool on a wire cooling rack as you make the frosting.
Using electric beaters, whip together the ingredients for the frosting until smooth. Taste and adjust sweetener and matcha if needed. Let cool in the fridge until you're ready to frost the cupcakes.
Once the cupcakes are completely cooled frost them with a piping bag, ziploc bag with the corner cut off, or just spread on top with a knife. Top with blueberries and shredded coconut.
Hey everyone! I haven't been posting so much these past few days so I just wanted to tell you what's up.
Usually i answer all the questions and messages i get within an hour but as this page is growing it's getting harder and harder to keep it up.
Don't get me wrong, I enjoy talking to you and if I could dedicate all my time to this I definitely would.
But at the same time I have alot to deal with in my own life.
I'm not saying that I won't answer anymore messages but sometimes i have to take a little break for myself.
Right now I'm working on some stuff that i think you will enjoy, but I'm also trying to build my personal life get a new job and correct some of the mistakes I've made on the way here. so if you feel like you can wait for it then you are free to stay and if you don't then I'm sorry to see you leave.
I won't give up this page so don't worry, just need to find ways to make it flow with my life instead of against it. 🤔

My absolute favorite thing lately has been making iced coffee at home and sitting outside in the morning sun admiring & reflecting this beautiful life!!! Of course listening to Novo Amor, Hozier, Bon Iver & The Bahamas 🌿
For me this is something that really helps me reconnect to myself and start my day on a positive note. It is SO easy to wake up each day and not take time for yourself. BUT, I highly recommend finding even 10 mins for you each morning. Love and take care of yourself, your WHOLE self💫

In recovery, permission is a powerful tool. Reminder to all: You have permission to eat. You have permission to rest. You have permission to show yourself compassion. You have permission to mess up. You have permission to set boundaries around food. You have permission to take care of your body even if you don’t like how it looks. You have permission to do whatever you need to do to honor your recovery!

during meditation one day, i had these two visuals pop into my mind. they were brought to me as my ideal clients. one with super style and great hair, and one pregnant. it was after this vision, that i immediately enrolled in dr sear’s wellness coaching and @bebomiainc ‘s fertility specialist certification. my goals are to help empower women with knowledge and support around a more balanced lifestyle, a cleaner approach to nutrition, and a mindful practice in yoga and exercise. through these simple mindsets and routines, i hope to create more peace and happiness for the woman that currently feels stuck, lonely, lost or unfulfilled.
