This green smoothie gave me all the energy this morning! Love starting the day off with fruits and veggies. Made with 1 cup of mango, a handful of kale and spinach, some chopped ginger, and almond milk 😍💚🌱
When in doubt, chuck it all in a bowl over some greens and call it dinner. I roasted this all on one sheet pan at about 350, starting with the sweet potato for about 40 minutes, the chickpeas seasoned with cumin for about 30 minutes and the cauliflower seasoned with curry powder for about 25 minutes. Then I threw it over mixed greens with sliced cucumber. This would also be really good with hummus but I was out sadly 😕 #whatagiraffecooks
